Harvesting the Organically grown maca roots: Dr. Viana Muller, Co-founder of Whole World Botanicals helps the community members harvest their maca roots. They are dried in the sun for 6 to 8 weeks after harvesting in the traditional way. This drying process allow the natural sugars in the roots to develop, imparting a sweet flavor and causes a substantial portion of the glucosinolates in the maca roots to convert to isothiocyanates, thought to be chemical actives containing hormone-balancing properties. Many companies dry their fresh maca roots at a high temperature for a few hours in a commercial electric dryer. This process does not allow the isothiocyanates to develop and the resulting product has weak properties.
